  2. Wash the courgettes before cutting them into thin slices using a mandolin. Place them on absorbent paper to dry them for about 15 minutes.
  3. In a bowl, mix the olive oil and salt to your liking. Add the zucchini slices and mix by hand.
  4. Then line the baking sheet with parchment paper. Distribute the zucchini slices, making sure to space them out. Bake for about 1 hour 30 minutes.
