Raisin Quick Skillet Cake

Ingredients

Eggs4
Sugar200g
Plain flour150g
Water100ml
Currants50g
Butter50g
Kirsch1 teaspoon
Fine salt1 pinch

Preparation of the recipe: express pan cake with raisins

  1. Crack the eggs and separate the yolks from the whites.
  2. In a bowl, whisk the egg yolks with the sugar until the preparation foams and whitens.
  3. Then add the flour, a pinch of fine salt, the kirsch and the currants. Dilute the batter by adding 100 ml of water little by little to have a preparation a little thicker than a pancake batter.
  4. Then whisk the egg whites until stiff. Gently add them to the preparation so as not to make them fall.
  5. Heat the butter in a pan. Then pour the batter and cook for 5 minutes on one side. Using a spatula or plate, flip the cake. Continue cooking for another 5 minutes.
  6. Serve very hot.
