Ripe, firm tomatoes1kg
Celery1 branch
Red bell pepper1
Garlic1 clove
Olive oil2 tablespoons
Granulated sugar1 teaspoon
Basil5 sheets
Thyme2 branches
Dried oregano1 pinch
Salt pepper

Preparation of the recipe: Neapolitan sauce

  1. Boil a large pot of water. Immerse the tomatoes in it for 1 minute. Then transfer them to a bowl of cold water and leave for 2 minutes. Drain and peel the tomatoes before cutting them into pieces.
  2. Peel and cut the onion into strips, finely chop the celery, then cut the red pepper into small cubes. In a sauté pan, heat the olive oil. Fry everything over high heat for about 5 minutes.
  3. Then add the tomato pieces, crushed garlic clove, thyme, basil and a pinch of oregano. Let cook covered for 25 minutes. Season with salt and pepper as desired. Add sugar to reduce the acidity of the Neapolitan sauce.
  4. Mix the Neapolitan sauce until you obtain a smooth sauce. Taste immediately.
