Preparation of the recipe: green tomato jam

  1. Cut the previously rinsed green tomatoes into quarters.
  2. Place them in a large jam bowl or in a deep saucepan. Then add the sugar and the juice of the two lemons.
  3. Scrape the seeds from the split vanilla pod lengthwise. Mix them with the previous preparation.
  4. Then bring everything to a boil over high heat, stirring constantly with a wooden spoon until the sugar is completely dissolved.
  5. Reduce the heat before continuing to cook the jam for about 35 minutes.
  6. After this time, transfer the green tomato jam into sterilized jars. Close and turn them over until cool.
