Ingredients

Confit poultry gizzards200g
Lettuce100g
Mushrooms of Paris4
Pine nuts1 tbsp
Tomato1
Nuts oil1 tbsp
Sunflower oil1 tbsp
Cider vinegar1 tbsp
Salt pepper1 pinch

Preparation of the recipe: gizzard salad

  1. Rinse and spin the salad.
  2. Wash, seed and dice the tomato.
  3. Clean and slice the mushrooms.
  4. Gently heat the gizzards in a pan.
  5. Pour the vinegar into a bowl, add oils, salt and pepper and whisk.
  6. Divide the lettuce, pine nuts, tomato, mushrooms and gizzards among 4 plates and drizzle your gizzard salad with the vinaigrette.
