Preparation of the recipe: goat cheese zucchini cake

  1. Rinse the courgettes thoroughly before finely grating them. Then brown them with 1 tablespoon of olive oil in a pan for a few minutes.
  2. In the meantime, preheat the oven to 180┬░C.
  3. Mix the eggs and milk in a bowl. Add the rest of the olive oil and the Provencal herbs. Season with salt and pepper. Mix.
  4. Then add the goat cheese and sifted flour and baking powder. Mix vigorously with a whisk to obtain a smooth paste.
  5. Transfer the cake batter to a greased or silicone mold. Bake for about 50 minutes. At the end of this time, check the cooking by inserting a toothpick or the blade of a knife in the center of the cake. It should come out with no dough residue.
  6. Unmold the goat cheese zucchini cake on a wire rack and let cool before serving.
